Why does the test send not look right?

There are two different ways that a test send can work. The ideal case is where you have Pending Recipients queued up, and the test send will populate the email using those actual pending recipients - so it's an exact copy of what the customer would normally receive.

However, in the event that you don't happen to have any pending recipients for a given email trigger, MageMail uses a bit of dummy data to send a test out. This is not quite as useful as a test with real customer data but is better than nothing.
